Lamb is generally fatty enough for it to brown easily. Brown the lamb cubes in a frying pan over moderate heat, in batches. Put in a casserole. Pour out the fat from the frying pan. Sprinkle the meat with the thyme, salt, pepper, onions and garlic. Add 2 tablespoons water, cover and cook over a moderate heat. Stir from time to time.
